The Chevalier-Montrachet appellation is one of the five prestigious grands crus of Puligny-Montrachet, located on the Côte de Beaune in Burgundy. It covers around 7.36 hectares on well-exposed east-facing slopes at a higher altitude than Montrachet. Chevalier-Montrachet is exclusively planted with Chardonnay, producing white wines of great distinction and remarkable mineral tension. The stony, shallow, limestone-rich soils encourage low yields, resulting in concentrated wines. On tasting, they reveal aromas of white flowers, citrus fruits, dried fruits, with occasional hints of flint and honey as they age. The palate is tense and structured, combining power and elegance with a persistent, saline finish. Chevalier-Montrachet wines have excellent aging potential, fully expressing themselves after several years in the cellar. They pair perfectly with fine fish, shellfish, or creamy poultry dishes.
