Emilian Gillet's Quintaine cuvée is a white wine of great finesse, offering a beautiful balance between richness and freshness.
Its color is pale yellow, clear and bright.
On the nose, it reveals delicate floral aromas, accompanied by notes of citrus and white-fleshed fruits (pear, peach) with a subtle mineral touch.
On the palate, the attack is fresh, carried by a well-controlled acidity that brings liveliness and lightness. The wine develops a beautiful amplitude in the mid-palate, where we find fruity and slightly buttery aromas, with a pleasant minerality on the finish. The persistence is remarkable.
Food and wine pairings: scallop carpaccio with lime, sea bass or turbot fillet with beurre blanc, vanilla panna cotta with lemon zest.
