The Saint-Aubin 1er Cru En Remilly White 2024 from Domaine Vincent Bachelet is the perfect embodiment of the nobility of the great white wines of the Côte de Beaune. Sourced from a mythical climat adjacent to the greatest Grand Crus of Puligny and Chassagne, this exceptional Chardonnay combines the mineral tension of its limestone terroir with the refined elegance of tailored oak aging.

TASTING NOTES

  • Nose: A bouquet of rare nobility, dominated by vibrant aromas of citrus (lime zest), white pear, and lemon verbena flowers, enhanced by flinty mineral notes. Airing reveals nuances of fresh almond, hazelnut, and a subtle touch of chalk.
  • Palate: A precise, crisp attack leads into a vibrant, weightless mid-palate. The texture is remarkably silky and mouthwatering, balancing the sharp minerality of the terroir with a delicate richness. The finish is monumental and persistent, lingering on ripe citrus, fresh butter, and a noble saline signature.

SERVING & CELLARING

  • Serving temperature: Serve between 10 and 12°C (50–54°F). Avoid serving too cold to preserve the full scope of its aromatic expression.
  • Serving advice: Ideally decanted in its youth to allow its mineral structure to fully unfold.
  • Cellaring potential: 8 to 12 years in the cellar.
  • Grape variety: 100% Chardonnay.

FOOD & WINE PAIRINGS

  • Recommended pairings: Sea scallop tartare with citrus, pan-seared Breton lobster, turbot in beurre blanc sauce, veal sweetbreads with morel mushrooms, or aged goat cheeses (such as a young Époisses or Charolais)
