The Burgundy red wine presented originates from the Gevrey-Chambertin appellation, in Côte de Nuits. Coming from the 2017 vintage, this dry 100% Pinot Noir wine is the result of a fusional and harmonious alliance between two exceptional microclimates: a hillside plot facing due East with a highly filtering, gravelly soil revealing Pinots of great delicacy, married to a south-facing, silty, and fertile plot offering powerful and spirited juices. The vines are 50 years old. Harvesting is manual, in small crates with an initial sorting in the vineyard. Vinification is carried out using partly destemmed grapes, with alcoholic fermentation exclusively using indigenous yeasts, alongside very moderate pumping-over and punching-down. Aging lasts 16 months in oak barrels (1/3 new wood, 1/3 1-wine wood, 1/3 2-wine wood).
