This cuvée originates in northern Burgundy in the Châtillonnais region, a place where limestone reigns supreme, with a cool climate and Oxfordian subsoil. A pure expression of the terroir, this wine is a blend of Chardonnay for its sharp acidity and Pinot Noir for its vinosity and complexity. Aged on slats for 36 months, we opted for an Extra Brut dosage of 2 g/L to preserve its flavor and length on the palate. Light effervescence, balanced bubbles, a floral nose, tension on the palate, and a mineral finish. A unique wine, full of character and conviction.
