The 2023 vintage, marked by a homogenous ripeness and remarkable natural balance, allows for a particularly accurate expression of the terroir: a vibrant, straight Fixin, yet endowed with an immediate generosity. An authentic, deep, and energetic wine that illustrates the estate's ability to combine power and finesse.

WINE TASTING NOTES

  • Profile and character: The robe presents a deep red color with dark cherry highlights. The nose opens with a beautiful aromatic intensity blending ripe black fruits, morello cherry, fresh blackcurrant, violet, and a hint of sweet spices. A subtly earthy touch, typical of the commune's soils, brings depth and complexity.
  • On the palate: The attack is full and structured, carried by assertive yet perfectly polished tannins. The body is dense, juicy, and without heaviness, revealing a bright fruitiness supported by a mineral backbone that extends the length. The finish gains in precision, freshness, and salinity, revealing the racy identity characteristic of the best Fixin wines.

SERVICE & STORAGE

  • Serving temperature: Best served at a recommended temperature of 15–16°C (59–61°F).
  • Aging potential: Can be enjoyed young for its bright fruit and generous texture, but it will reach its full potential after 4 to 10 years of cellaring. Evolution will reveal notes of undergrowth, bramble, fine leather, and an even silkier texture.

  • Recommended pairings: This Fixin naturally pairs with cuisine of character: roasted farm poultry, grilled or stewed cuts of beef, veal chop with herbs, light jugged game (civet), duck breast, or confit shank. It also pairs very well with Burgundy cheeses such as a young Époisses, a Langres, or a Soumaintrain.
