This wine from the AOC Bourgogne is a dry white Burgundy wine. The cuvée “Condemaine” is a blend of Chardonnay from two origins: one from the climat “Les Condemaines” in the clay soils of the village of Volnay, and the other a small-berried Chardonnay known as "muscaté" from Mâcon La Roche Vineuse. Aged for 12 months in 500-liter barrels (2 to 4 years old), followed by an additional 6 months of aging in stainless steel vats on fine lees. Only 1,200 bottles produced. The initial nose evokes a very zesty Chardonnay with notes of candied citrus, Granny Smith apple, and a slightly honeyed floral touch. The second nose reveals a beautifully polished wood character with well-integrated fine sweet spices. On the palate, the acid-to-fat ratio is close to perfection, featuring a beautiful body held together by a formidable mineral acidity.

TECHNICAL DETAILS

  • Grape variety: 100% Chardonnay.
  • Terroir: Clay soils.
  • Age of the vines: 20 years on average (blend from the "Les Condemaines" plot in Volnay and from Mâcon La Roche Vineuse).
  • Viticulture: Organic.
  • Vinification & Aging: Whole-cluster pressing with a pneumatic press, 24-hour settling, then racking. Fermentation with indigenous yeasts for 8 to 10 weeks in vats. 100% malolactic fermentation. Aged for 12 months in 500-liter barrels (2 to 4 years old), followed by an additional 6 months in stainless steel vats on fine lees (and 8 months in vats on the lees). Racking and filtration before bottling.
  • Alcohol content: 13%.
