Fixin (pronounced “Fissin”) is a red wine from the Côte de Nuits with a bold character. It shows a deep violet hue and offers floral aromas (violet, peony), fruity notes (morello cherry, blackcurrant), and a slight gamey touch. When young, it is tannic, but gains roundness and finesse with aging, making it a rich and structured winter wine.
The white version is rarer but fine and expressive. It pairs well with stews, roasted meats, tapas, or pork curry, while the whites complement shellfish, fish in white sauce, and goat or blue cheeses.
Serving temperature: red 13–15 °C, white 11–13 °C.
Located between Dijon and Gevrey-Chambertin, Fixin lies on limestone and marl soils, facing east between 350 and 380 meters in altitude.
