Vin de paille
Vin de paille is an iconic specialty of the Jura, made from carefully selected grapes that are left to dry for several weeks on straw mats or hung in well-ventilated attics, in order to concentrate their sugars.
This traditional process, known as passerillage, results in a sweet wine of great aromatic richness, with notes of candied fruit, honey, fig, and walnut.
Made primarily from Savagnin, Poulsard, and Chardonnay, vin de paille is aged for a long time in barrels, often for several years, giving it remarkable complexity and excellent aging potential.
It is produced in the same communes as the main Jura AOCs and carries a specific designation within them.
Rare, intense, and precious, it pairs beautifully with desserts, foie gras, or can be enjoyed on its own as a wine for special occasions.
