Châtillonnais
At the northernmost edge of Burgundy’s wine region, between Dijon and Tonnerre, the Châtillonnais has emerged as the heartland of Crémant de Bourgogne. Across nearly 250 hectares, winemakers craft refined white and rosé sparkling wines, primarily from Pinot Noir and Chardonnay, with touches of Aligoté and Gamay.
These south and southeast-facing slopes enjoy generous sunshine and rest on limestone soils—ideal conditions for producing balanced grapes with delicate aromas. The resulting Crémants are distinguished by their freshness, finesse, and natural elegance.
But the Châtillonnais is more than a sparkling success story—it's a vineyard with ancient roots. Historical records show vine cultivation here over 2,000 years ago. Despite wars, phylloxera, and agricultural downturns, the region has experienced a vibrant revival since the 1980s, driven by the passion and perseverance of its growers.
In addition to Crémants, you’ll also find still wines under the Bourgogne AOC:

In Châtillon-sur-Seine, don’t miss the famous Vix Krater—an ancient “tastevin” over a ton in weight, dating back to the 6th century BC—a powerful symbol of the region’s timeless connection to wine culture.
